Ingredients for 4 people:
4 rabbit hind quarters
4 tablespoons mustard
4 cloves of garlic
4 sprigs rosemary
4 tablespoons verjuice
Salt, pepper
Method:
Preheat oven to 180°c
Cut four big squares of aluminium foil, large enough to wrap each leg.
Cut four squares of baking paper and place on top of the foil.
Place each leg on the bottom half of the square.
Spread a tablespoon of mustard over each leg.
Slice the garlic and sprinkle one sliced clove over each leg.
Top with a sprig of rosemary.
Pour over a tablespoon of verjuice.
Sprinkle with salt and pepper.
Fold the aluminium foil and paper back over the rabbit. Fold the edges around tightly and turn in towards the meat. Make sure they are well sealed.
Place the parcels in a baking dish and cook for about one hour. The rabbit is cooked when the juices in the joint run clear.
Hint: You can also cook all 4 legs in one very large parcel.
